Spanish Almond Cake Recipe

Spanish Almond Cake Recipe - This is traditionally from Galicia, but can be found in most areas of Spain, its known in Spanish as Tarta de Santiago (St. James cake). 

This cake itself doesn't have any type of flour in it, making it a great option for anyone on a gluten-free diet.   

The top of the cake is traditionally dusted with icing sugar with an imprint of Santiago's (St. James) cross.

This is so simple as the main ingredients are just almonds, eggs and sugar.

Ingredients

Each ingredient is the same weight to the other so you can adjust the quantities accordingly - 1 large egg = 50 g.

3 eggs , room temperature

150 gr sugar 

150 gr almond meal (finely ground almonds)

½ tsp cinnamon powder

¼ tsp salt

Zest of 1 lemon

zest of 1 clementine or small sweet orange

icing sugar

Method

Pre heat oven 360ºf/180ºc

Whisk eggs and sugar in a bowl until the mixture turns pale.

Add the rest of the ingredients, (except for icing sugar)  use a spatula to gently fold everything until well combined.

Pour batter into a 7 inch (18 cm) springform pan that has been buttered and floured. Bake in a preheated oven at 360ºF (180ºC) for 40 minutes or until golden brown and fully cooked (tip, it will brown quickly don´t panic)

Cool completely. Place the Santiago cross (or any other design) cut out on top and generously dust with icing sugar all over the cake. Carefully remove the cut out. Slice and serve, enjoy!

If you wish to go the full hog and put the cross on, you can print off this and cut it out.

Serve as a dessert or even for breakfast , its also perfect for afternoon tea in which case add some dollop clotted cream and freshly grated orange zest.

The cake can be made with a base. The base can be a shortcut pastry or puff pastry.

If using a crust -

Roll the dough out on a floured surface and then fit into a well greased baking mould.

Prick with a fork and then pour the filling over the base.

Bake for about 30 minutes, until the cake is golden brown.

Allow the cake to cool in the pan, and then transfer to a serving dish, decorate the cake as above with icing sugar.
